Badam ka Halwa-

Almonds known as (Badam) is consumed almost by every Indians from infant to elders in India.I soak 5 almonds overnight everyday and peel off the skin and have it in Morning with milk as almonds contain lots of healthy fats, fiber, protein, magnesium and vitamin E. The health benefits of almonds include lower blood sugar levels, reduced blood pressure and lower cholesterol levels.

Badam halwa is extremely rich,delicious and colourful Indian dessert in South India.
Key ingredient to make this halwa is you need a lot of patience

Let’s have a look at the recipe of Badam Halwa-

Serving Portion-1small bowl

INGREDIENTS –
100gm almonds
6-7 teaspoon of ghee
5 teaspoon Sugar
1 cup milk
Saffron soaked with hot milk

METHOD-
*Soak the almonds overnight peel off the skin next morning .
*Take blender put the almonds peeled and blend until it becomes a coarse paste
*Take a pan add ghee and almond paste stir continuously on slow fame for few minutes (4-5min) add some milk and stir until it absorbs all milk
*Add sugar and keep cooking till it becomes light golden brown in color.
*Add few strands of saffron soaked in hot milk
Serve badam halwa at room temperature. The halwa can stay for good 3-4days in refrigerator.

Mango Pesto Basil Pizza

Being locked up in the house for such a long time I have badly started craving my Restaurant outings.Taking inspiration from @zencafemumbai I experimented a variant of their Mango Basil Pizza (No oven Pizza)๐Ÿ˜‹

So here’s my recipe for homemade PESTO MANGO PIZZA-

I choose to prepare a whole wheat base adapted by a recipe from @vegrecipesofindia.
.
.
Lets have a quick look of *PESTO SAUCE RECIPE-
.
Ingredients
2cups of fresh Basil leaves
1/3rs cup Walnuts (Pine nuts,almonds or Pistachios)
4-5 cloves of garlic
1 TSP lemon juice
1/3rd cup Parmesan cheese(can be omitted if you want to make it vegan)
Salt as per requirement
1/3cup Olive oil

METHOD-
*In a pan dry roast your choice of nuts for 3-4min on a slow flame to increase the nuttiness aroma
In a blender or food processor.
*Put 2 cups of Basil leaves and toasted nuts and blend them to a coarse mixture.
*Add garlic and lemon juice and blend again.
*Add the cheese and let the blender run again.Scrape the sides and mix the mixture.
*While the blender is running slowly add the olive oil to emulsify it.
*Add Salt to taste and your Pesto is ready to serve.

RECIPE OF PESTO MANGO PIZZA –

INGREDIENTS-

Pizza base
Pesto sauce
Cut mangoes 2/3
Basil leaves -handful
Pine nuts -8-10 pieces
Ricotta/Feta cheese-1/2cup
Zaatar powder (optional)

METHOD- *Spread the pesto sauce uniformly on the pizza base , bake it to a golden brown crust on a thick bottomed pan
Just when it’s about done *Top it with mangoes basil leaves and pine nuts and cheese *Sprinkle some Zaatar on top of it *Bake for about 2 mins more by covering the pan with a lid *Ur pizza is ready to serve

Wheat Sphagetti-Aglio olio

Spaghetti Aglio Olio –

Pasta is very simple yet extremely tasty and flavorful dish.

Sharing a quick recipe of the aglio olio version I made.

Method-

1)Take spaghetti of the brand of ur choice and cook it as per the instructions on the packet
*Make sure it’s got a bite (al dente) to avoid mushy texture and breaking of pasta while mixing .

Tip: Add some oil while cooking so that the pasta doesn’t stick to one another and once you drain the water after cooking make sure to run it cold water to stop the process of cooking


Dressing –

For the dressing we need to prepare garlic oil – *Now u can buy readymade oil or keep a handful of garlic cloves in a jar of olive oil for a couple of days and let the oil soak the flavour of garlic completely *Alternatively you can also heat some olive oil in a pan and add chopped garlic to it , keep it on the lowest flame and don’t let the garlic burn (keep adding cold olive oil as soon as u see the oil boiling). *Once this is ready take it off the flame and season it with chilli flakes , grounded black pepper and salt *Pour this mixture over the cooked pasta and mix it up.

Garnish with chopped parsley and serve with love๐Ÿ˜Š

Millet Dryfruit Ladoos

The power packed nutri ladoo is not only healthy during winters but acts as a great filler as a school box snacks for kids , or serve it as a healthy mix drink for elders, kids and all ages  as a breakfast dish . .

INGREDIENTS-
*1/4 cup Ragi
*1/2 cup pure ghee *1/2 cup brown sugar/jaggers
*1/2 cup
Walnuts,Almonds,Pistachios, cashewnuts
*1/2 tsp Cardamom powder
*1/4cup gram dal
.

SERVINGS-10 LADOOS
PREPARATION TIME-20 MINUTES
BENEFITS-Rich in Vitamin K,A and D
Which builds Hormones.

Method-

.
*Roast ragi and fried gram dal till you can smell a nice aroma and allow it to cool down
*Melt the ghee and keep it aside to cool down
*Roast nuts until it smells aromatic and allow it to cool down
*Roast Ragi for few minutes 2-3minutes and keep it aside
*Let all ingredients come to room temperature and cool down
*Blend nuts,gram dal ,ragi and make into a fine powder
*Seive all the grounded ingredients to get fine powder
*Take a Pan add ghee and now add the powder and mix well *Keep the flame low and stir continuously *Add cardamom powder and jaggery and switch off the flame.
*Allow the mixture to cool down *Form round balls by applying little ghee on your palms to avoid sticky mixture, when the mixture is slight warm advised start making ladoos. *Initially ladoos will be soft but on cooling down it will harden up.
Ready to serve tasty and healthy ladoos.

Since lockdown in Maharashtra still continues and have come up with new restrictions I am trying my hands on my favourite homemade Classic hummus
Homemade hummus is simple and easy to make to satiate your cravings for breakfast or snacking time.Its time to pull out the food processor and treat yourself to this delicious healthy recipe that can be used as a dip or a spread for wraps and sandwiches. .

. *2 cups of overnight soaked chickpea *2 Garlic clove
*2 tsp of Olive oil
*2 tsp lemon juice
*2 tsp tahini paste *1 dash of sea salt and pepper

  • 1/2 cup water *For Garnishing
    3-4 leaves of parsley and a pinch of paprika
    *Ice -1/2 .

    METHOD-
    .
    *Put all ingredients into a food processor and blend until it becomes smooth paste is formed.. adjust the seasoning as per liking *Add some water to adjust the consistency *Add ice or super cold water once ur paste is formed to make ur hummus super light and airy .
    .

Hummus Ready to serve with fresh vegetables or Onion/Almond crackers.

Infant lunch-Milk and dryfruits

Infant lunch

We are kickstarting our day with healthy eating lunch packed with full nutrition and good fats on the weekend.My girl turned 1year old and I Introduced solid food when she was 7 month old.


She loves this healthy food mixed with 1cup of cows milk and half teaspoon of dry fruits according to your baby’s diet.

Preparation time:10-15minutes

Serving:A small bowl


Recipe of mixed dryfruits:

Ingredients:
Almonds 100gms
Cashwenuts 50gms
Pistachios 50gms
Raisins 10-15pieces
Walnuts 100gms

Method:

Roast them well .Let it cool down grind them finely in grinder.Store in a airtight container. You can store them in a fridge/Room temperature for a month. .
